Hand sinks
Health regulations require that every restaurant have at least one hand sink for employees to use before handling food, after using the restroom, or after a smoke break. Inadequate handwashing equipment is the second most common citation issued by King County Public Health. It is classified as a red (serious) violation.
Compartment sinks
One-compartment sinks are used for food prep. These sinks can also be used for soaking dishes and other cleaning tasks provided they are not used for food preparation. Three-compartment sinks are used for dishwashing: one compartment for washing, one for rinsing, and one for sanitizing. Even if you have a commercial dishwasher, your local health department will more than likely require you to install a three-compartment sink as a backup.
